Mastiha is the natural resin of Pistacia lentiscus var chia, a tree which grows only on the Aegean island of Chios, Greece with many beneficial properties and wide-ranging uses since antiquity.

Uses:
1. As a gum alone or with a small quantity of beeswax to become softer. Mastiha was the first chewing gum worldwide!
2. As a powder, smashed in a bowl, as flavoring for bread, cookies, ice-creams, yoghurt and pastries, such as pannacotta, creams, mahalepi.
3. As water, by adding in 1L of water 50g of mastiha. Leave in the fridge overnight. Consume as a digestive drink.

Interesting note: the more frozen the mastiha is, the easier it becomes powder and does not stick.
